Recipe: Walnut Meatball & Apricot BBQ Suace

WALNUT MEATBALLS with APRICOT BBQ SAUCE
Makes 12 servings (24 meatballs)

•       Meatballs     •

Mix all ingredients together for meatballs. Form into walnut size balls. Freeze. Mix
all ingredients together for apricot-barbecue sauce and bring to a boil. Pour over
meatballs. Bake covered at 350 F for 45 minutes.

ground walnuts                 1 3/4 cup
salt                                               1 tsp.
finely chopped onion               5 tbs.
sage                                             1 tbs.
grated cheddar cheese      1 1/4 cup
cottage cheese                            1 cup
garlic clove                           4 eaches
fresh parsley, minced              7 tbs.
eggs                                       9 eaches

olive oil                                      4 tbs.
lemon juice                                1 cup
apricot jam                             1 quart
catsup                                  1 1/2 cup
brown sugar                          3/4 cup
grated onion                         3/4 cup
