We all love a new recipe. Our wonderful Executive Chef, Linda Brinegar has provided us with her amazing staple recipe. Careful though, make it once and you may be making it every week!
Ingredients
2 cups onion, chopped
2 cloves garlic, minced
2 large stalks celery, diced
2 tablespoons oil
1/4 cup flour
1 1/2 cup soy milk or water
1 tablespoon McKay’s chicken seasoning
2 tablespoons flax-seed meal
1 teaspoon sage, ground
1/2 teaspoon salt
1 tablespoon parsley
1 cup walnuts, chopped
3 cups corn flakes, slightly crushed
Preparation
Sauté onion, garlic, and celery in oil for 10 minutes. Add flour and stir. Add water or milk and stir. Bring to a boil and continue boiling for 2 to 3 minutes to thicken. Add remaining ingredients in the given order, mixing after each one. Pour in a loaf pan that is well coated with non-stick spray. Bake at 375 for 45 minutes or until brown. If using the miniature loaf pan bake for 20 minutes. Let set for 10 minutes on a rack. Turn out of loaf pan on to a serving dish.
